A millesimato sparkling wine of outstanding elegance, aged 82 months on the lees using the traditional method
This Alta Langa DOCG Riserva Pas Dosé Millesimato 2015 is made from Pinot Noir and Chardonnay grown on marly-calcareous soils in Rodello, at over 500 meters altitude. Grapes are hand-picked in late August and gently pressed using only the free-run must.
Following a 28-day low-temperature fermentation in steel and weekly bâtonnage, the wine undergoes bottle fermentation in spring and ages for an extraordinary 82 months on the lees, gaining exceptional complexity and balance.
Bright gold with an ultra-fine and persistent perlage. The bouquet is complex, elegant and expressive, with notes of dried fruit, honey, flint and floral hints. On the palate, it is creamy, dry and deep, with a vertical structure and long citrus finish.
Perfect with gourmet aperitifs, white or black truffle, Roccaverano robiola, aged Parmigiano Reggiano, raw fish, sushi, seafood pasta, grilled fish and white meat.
