Organic Gavi DOCG made from Cortese grapes. Fresh, harmonious, mineral. Perfect with fresh cheese, white meats, and seafood.
An elegant, organic Cortese from the heart of the most authentic Gavi region
This Gavi DOCG is produced in Tassarolo, one of the most prestigious areas of the appellation. The organic vineyards are located at an altitude of 280–300 meters, with southern and southwestern exposure on clay soils. The vines have an average age of 20 years.
Fermentation takes place in temperature-controlled stainless steel tanks at 18°C, preserving the fresh, fruity aromas of the Cortese grape. The wine then refines for about 5 months in steel with regular bâtonnage on the fine lees, followed by at least 3 months in the bottle to reach balance and aromatic finesse.
Bright straw yellow color. The bouquet reveals white fruit, wildflowers, and citrus notes. On the palate it is dry, fresh, harmonious and mineral, with a clean, savory finish that reflects both terroir and organic care.
Ideal with fresh cheeses, white meats, steamed fish, seafood starters, and vegetables.
