A millesimato sparkling wine of great elegance and complexity, aged 70 months on lees
This Alta Langa DOCG Riserva Pas Dosé Millesimato 2016 is produced from Pinot Noir and Chardonnay grown on marly-calcareous soils in Rodello, at over 500 meters of altitude. The grapes are hand-harvested in late August and gently pressed to extract only the first press juice.
After a low-temperature fermentation for 28 days and a period on fine lees with weekly bâtonnage, the wine undergoes bottle fermentation in spring. It then rests for a remarkable 70 months on the lees, evolving with finesse and remarkable aromatic depth.
Bright gold with an extremely fine and persistent mousse. The bouquet is complex and refined, with hints of dry fruits, honey, flint, and mature nuances. On the palate, it is dry, savory, creamy and deep, with a long citrus finish and vertical structure typical of Pas Dosé style.
Perfect with refined aperitifs, white or black truffle, Roccaverano robiola, aged Parmigiano Reggiano, raw fish, sushi, seafood pasta, grilled fish and white meats.
