An ancient variety for a modern wine

Matìn is made from Minutolo grapes, an ancient aromatic variety from the Itria Valley, rediscovered and revived after decades of neglect. Although not highly productive, Minutolo offers wines with unique freshness and expressiveness, perfectly captured in this distinctive label by Marco Ludovico.

Yeasts, time and authenticity

Winemaking is artisanal and personal: fermentation starts with a pied de cuve of wild yeasts from grapes hand-harvested at dawn. After resting through the winter, the wine is refermented in bottle in spring, using neutral selected yeasts that preserve the grape’s original aromas. There is no disgorging: the lees remain in the bottle, preserving the wine’s natural energy.

Fresh, natural and low in sulfites

With just 25 mg/l of added sulfites, Matìn is a natural, light, and lively sparkling white. Easy-drinking yet full of personality, it’s perfect for relaxed, authentic moments — always with full respect for the raw material.
