Great freshness and very fine perlage, like any self-respecting classic method. It lacks nothing, after 12 months of aging on the noble lees: notes of bread crust, pleasant hints of cedar and lemon. The minerality typical of the grape is marked.
Ideal as an aperitif, superb with oysters and fish menus, excellent with pastries.
