Organic Alta Langa Metodo Classico, aged 30 months on lees. Bright gold, fine mousse, notes of honey, dried fruit and a long citrus finish.

A high-altitude organic sparkling wine with refined character and long-lasting elegance
This Alta Langa DOCG organic sparkling wine is produced in Rodello, on marly-calcareous soils at over 500 meters of altitude, where Giribaldi cultivates Pinot Noir and Chardonnay. Harvesting is done by hand in late August, and only the first press juice is used.
After a low-temperature fermentation for 28 days in steel tanks, the wine rests on the fine lees for a few months with weekly bâtonnage. In early spring, the bottle refermentation (tirage) begins and lasts around 60 days. The wine then ages on the lees for at least 30 months, as required by the DOCG rules, achieving depth and harmony.
Brilliant gold in color with a fine, persistent perlage. The nose is aromatic, powerful, and elegant, with notes of minerality, dried fruits, and honey. On the palate, the mousse is creamy and smooth, with a savory, soft mouthfeel and a long citrus finish.
Perfect with elegant aperitifs, raw fish, sushi, seafood first courses, grilled fish, and white meats.
